KArEn had cReated a new dish to serve in her café. It had layers of sponge with yoghurt, grape jelly and grapes and finished with a soya milk crema topping. It tasted lovely and her trial customers agreed. But she also came up with a luxury version which had clotted cream on top instead of the crema. She was able to charge more for the luxury version and it was the luxury version that sold the most, making a good little profit.
